Pep’s Potato Fritters Recipe

Due to request I’m posting my recipe for my Potato fritters.
These are great warm in a bento box served with spicy barbecue sauce or as part of a meal.

These could also be great using leftover mashed potatoes or roast potatoes mashed though I haven’t tried this yet.
Change the seasoning’s in accordance to what you have already added if doing this.

For calorie counters this recipe comes in at 110 calories per fritter.

I have used margarine and skimmed milk for this which should be as healthy as possible but if you would like to substitute for butter and Semi skimmed or full fat milk be aware of the calorie changes.

You could also substitute the Japanese Panko breadcrumbs for normal breadcrumbs if Panko is too hard to get a hold of.

I love this recipe for the fact that these get so crispy with no need for frying or a single drop of oil.

Pep’s potato fritters
Serves 2
110 calories per fritter
Ingredients

500g of baking potatoes, peeled,washed & quartered
20g Margarine
40ml Skimmed Milk
20g Panko Breadcrumbs
20g frozen peas
20g frozen sweetcorn

Equipment

Oven
Saucepan
Scales
Measuring jug
Colander
Baking tray
Baking paper
Bowl
Potato masher or ricer
Spatula
Mixing spoon

Method

Put your prepared potatoes in a saucepan and fill with cold water an inch or two above the potatoes.

Bring the water to a boil and boil the potatoes until tender and soft.
To test poke the biggest potato piece with a knife through the middle.
you should feel no resistance or hard bits.

Drain these in a colander.

Preheat the oven to 220 degrees Celsius (425 Fahrenheit, Gas mark 7).

Prepare a baking tray with a sheet of grease-proof paper to cover.

In a large bowl, mash the drained potatoes adding salt and pepper to taste.

Weight out the margarine, mix well.

Pour in the milk gradually mixing as you go until an even consistency is achieved.

Next measure in the Panko breadcrumbs, mix well, it should be forming a sort of dough consistency now.

Next make a well in the mixture and measure in your frozen peas and sweetcorn, fold these in, making sure they don’t get crushed.

Split your mixture into 6 – 8 even pieces

With a spatula,mould each into a flat round on your baking tray.

Cook for 10 minutes.
Turn your tray around and cook for another 10 minutes.

Next flip your fritters over and cook for an additional 5 minutes.

Serve warm.

      I’ve never cooked German potato pancakes, though anything potato is a winner in my book. ^_^
