Over in the UK it is getting rather chilly and we English just love our potatoes!
This is a perfect meal for those times it’s too cold to set foot in the kitchen!
It’s so embarrassingly easy, it can hardly be called a recipe!
Serves: 2 – 4
4 medium/large baking potatoes
Filling of choice: tuna and mayonnaise, butter, cheese, baked beans, chilli, cream cheese and chives etc….
Scrub the potatoes and heat the oven to 220oc.
Put two potatoes on each metal skewer.
Place on a rack in the oven and cook for about 80 minutes.
Prepare your fillings of choice and then crack open the jacket potato by slicing it in a cross shape.
Stand back! It will be very hot and steamy in that potato!
Push the sides of the potato so the potato is broken up a bit and pushes open the slits more.
Add in your fillings and eat!!
If you can’t wait 80 minutes you can go the express route, though it depends how big your potatoes are…
If you prick the potato all over you can place it in the microwave for 8-10 minutes.
Wipe away the excess water that has escaped through your prick marks.
Place it in the oven for 15 minutes on either side to brown the skin up.
This is time saving for one or two big potatoes or for 4 smaller potatoes (2 at a time for 10 minutes).
