As promised, today I will share with you my recipe for “mushroom gravy” as I like to call it!
This calorie saving flavour explosion beats an unsatisfying salad any day of the week.
Coming in at only 116 calories for this ENTIRE recipe, you really can’t beat it!
It goes wonderfully in a toasted roll and would be a perfect accompaniment to rice as well as on the side of a fry up of course!
Mushroom Gravy
Serves 4…possibly!
Ingredients
300g white mushrooms
50g dried Shiitake mushrooms
2 beef stock cubes
1 tablespoon Worcester sauce
2 teaspoons Soy sauce
1 teaspoon Mirin
1/2 teaspoon Porcini mushroom paste (optional)
Boiling water
Method
Start by shredding the dried Shiitake mushrooms into smaller pieces and placing them into a large bowl.
Pour over boiling water to almost cover and add in the Mirin and a teaspoon of soy sauce, set aside.
Wash the white mushrooms and have some therapy time by ripping up the mushrooms into smaller pieces, take the stalks off separately and roll them between your fingers to create smaller strands and add all of these pieces into the bowl with the Shiitake.
When this is finally done, heat up a good sized sauce pan to a medium high heat and add in all the mushrooms including the Shiitake “stock”.
Part the mushrooms in the middle and add in the mushroom paste if you are using it and stir in thoroughly.
Cook the mushrooms until their liquid is fully released and then add in the Worcester sauce and another big splash of soy sauce, maybe another teaspoon or so.
Crumble in 2 beef stock cubes and stir thoroughly.
Simmer until the gravy is at the thickness of your liking.
Serve!
The longer you leave the mushrooms the more flavour they absorb as well as the gravy getting thicker!
Definitely keeps well and improves day by day!

Mushrooms are great for keeping you satisfied, their meaty bite does wonders!!
The imperial measurements for the weights are 10.5 ounces of white mushrooms and 1.7 ounces of dried Shiitake mushrooms!
