Day 5: Waste Not Want Not Week: Gammon Joint!

Today is day 5 of 5 on making delicious dinners from your leftover gammon or pork joint, yes the last day folks!

Every day this week I have been posting two recipes for you to choose from.

Today I am focusing on hearty, comforting, easy foods, perfect for the end of a tiring week I’d say!

Today’s recipes are:

Split Pea & Gammon Soup
Serves 4

Split Pea & Gammon Soup

Ingredients
1 teaspoon vegetable oil
1 large onion, finely diced
250g dry green slip peas
100g chopped gammon
Water
Salt and pepper to taste

Method

In a large cast iron pot or saucepan add the vegetable oil and on a medium heat sauté the onion.

Remove from the heat and add in the split peas and gammon pieces, season with salt and pepper.

Stir, then add enough water to cover the peas and bring to the boil.

Turn down to a low heat or place in a 160oc oven (if using an oven proof pan) for about 2 hours, checking and stirring every 30 minutes, adding more water if necessary.

Serve with a bread roll and enjoy!

Gammon, Pea & Potato Frittata
Serves 2

Gammon, Pea & Potato Frittatta CU

Ingredients
1 tablespoon vegetable oil
2 small potatoes, chopped thin
100g gammon pieces, chopped
4 eggs
A handful of frozen garden peas
Salt & pepper to taste

Method

Break the eggs into a jug and whisk.

In a medium sized frying pan heat the vegetable oil and when hot add the potatoes in and fry until golden and cooked through.

Making sure the oil has coated all of the inside of the frying pan, on a medium heat add the eggs, gammon and peas to the potato and season with salt and pepper.

Stir once to evenly distribute the fillings then leave to cook until the top is still runny but the edges are cooked.

Heat a grill to a medium heat and place the frying pan under until the top is golden brown and is no longer runny.

Serve!
It’s delicious as breakfast, lunch or dinner!
