This week I got out one of my very first bento boxes, ahhhh, the nostalgia.
Way back when in 2012 I showed you my adorable frog bento box from Japan, with considerably worse lighting than now.
This week I fished it out to make this noodle bento, packed with tons of healthy veg.
First I cooked a tiny whole chicken breast as a topping.
I part cooked the noodles then added plenty of sweetcorn, peas, sliced white mushrooms and carrot and stir fried them all together.
I added a dash of soy sauce for seasoning and served it with some raw carrot I reserved, cut into flowers.
Last but not least, I cut the chicken and laid it on top.
A simple meal but with plenty of everything needed to fuel you for a good day and with some colour for cheer!
